Perfect weather for this recipe, it's great as a mocktail, but I prefer it as cocktail - just add a shot of gin to the bottom of your glass! Great to enjoy during spring in the garden or to go with my lovely spring October menu in the latest issue of Yum. Gluten Free Magazine. Cheers!

SPRING THYME FIZZ

Serves 1   I   Prep time 5 min   I   Gluten Free   I   Dairy Free   I   Egg Free   I   Nut Free   I   Soy Free   I   Sugar Free   I   Vegan

PROVISIONS

  • 2 sprigs fresh thyme
  • 1 cups of ice
  • 1 blood orange, juiced.
  • Soda water to fill glass

METHOD

  1. Muddle 1 thyme sprig in a glass.
  2. Top with ice.
  3. Pour over blood orange juice and top up with soda water.
  4. Garnish with remaining sprig of thyme and a slice of blood orange.
