If you follow my Instagram you will know I love to forage for my own mushrooms!  This dish is great for breakfast or as a side dish to a hearty winter roast. Here I serve it with toasted homemade gluten free bread and scrambled eggs. The combination of butter, garlic chives, thyme, pecorino and prosciutto are classics that suit the mushroom SO well! Give this a go with any mushroom you like, or a combination of them.

If you like foods that have a little kick, you'll love these stuffed jalapeño. The chorizo crumb adds an extra kick of smokiness, a little goes a long way. It’s one of my favorites for parties, the recipe can easily be tripled for a crowd and will be sure to spice up any backyard BBQ.

Towards the end of summer I had a glut of zucchini I had to deal with. I decided to make zucchini kimchi for the second time. The first time I made it, I made 2kg, it's so delicious and beautifully fermented that I wanted MORE! This time around I made 14kg! Since the summer we have gone through 4kg with the remaining slowly fermenting only getting better as time passes.

Funny story, but totally true... My mother and I went foraging for pine mushrooms. On our journey we passed a chestnut farm. We love them, so turned the car around and went back. We drove up the driveway of the chestnut farm and followed the signs towards the dark shed and parked. As I was getting the dog out of the car I heard a little voice coming from the dark shed say "Dimi?" (that's my mothers name), mum opened up the boot to grab her purse...

This recipe is a winner. Impress your loved one with this special feast. You can have one potato each, but two is better because once you finish your potato, you will wish you had another! I like to pop it all on the table so you can serve yourself (there’s something feast like about that), I prefer that to plating up each individual serve. Try a nice white wine like Chardonnay, Riesling or Sauvignon Blanc to enjoy this with.
