This salad goes beautifully with BBQ grilled meat, ribs or a cheese dish like mac & cheese! If you don't have any pickles, just chop some cucumber and pop it in a bowl with some vinegar, salt and sugar. Let it sit for 30 minutes and drain it.

Towards the end of summer I had a glut of zucchini I had to deal with. I decided to make zucchini kimchi for the second time. The first time I made it, I made 2kg, it's so delicious and beautifully fermented that I wanted MORE! This time around I made 14kg! Since the summer we have gone through 4kg with the remaining slowly fermenting only getting better as time passes.

They say to never shoot in direct sunlight, to hell with that, the sun was far too nice to be stuck inside! 

Today's recipe is part of 3 recipes featured in the March issue of Yum. Gluten Free Magazine. The theme is chocolate, so I thought I would share a couple of simple savoury Mexican inspired chocolate recipes (and 1 sweetie!),  using some of my favourite stone-ground staples.

These are so good! I used ginger beer to simmer the pork, the fantastic thing about this is the sugars in the ginger beer make the pork beautifully caramelised. Perfect recipe to entertain with, as you can prepare it in advance and finish it in the oven before you serve!

Perfect weather for this recipe, it's great as a mocktail, but I prefer it as cocktail - just add a shot of gin to the bottom of your glass! Great to enjoy during spring in the garden or to go with my lovely spring October menu in the latest issue of Yum. Gluten Free Magazine. Cheers!
